Freezer Meals for the Starving New Dad



As Baby Char's arrival creeps closer I have been doing more and more "nesting".  I was on the phone with one of my sisters telling her about how my mind has a hard time settling down at night because there's a billboard sized to-do list blinking in my brain.  She informed me I was indeed in nesting-- thanks for the low down Mindy.

As part of baby prep I want to make some freezer meals so that my poor hubby doesn't shrivel up and die like it almost did my first trimester (jk but he did end up losing as much weight as I did).  Hence the creation of:
I will be preparing this little list of food items to store in my freezer OR to have on hand, easy to assemble.

NOW onto the freezer meals:

Baked Creamy Chicken Taquitos -- This is one of hubby's personal favorites.  He can devour these babies in no time.

Rockin' Italian-Style Meatloaf

Natchitoches Meat Pies

Southwestern Beef Wraps

Crispy Coconut Chicken Fingers

Homemade Hot Pockets

I'll also be making:

Black Bean Soup which is SO divine but I will only be blanching and freezing the produce, then have everything else on hand.


I'm excited to try out some of these recipes!  I'll let you know how it goes!
